Ingredients

To prepare biryani masala at home, you will need the following ingredients:

– 1 tablespoon coriander seeds (dhania)
– 1 tablespoon cumin seeds (jeera)
– 1 tablespoon black peppercorns
– 1 tablespoon fennel seeds (saunf)
– 1 tablespoon green cardamom pods
– 4 cloves (laung)
– 1 inch cinnamon stick (dalchini)
– 2 black cardamom pods
– 1 star anise (chakri)
– 2 tablespoons black mustard seeds (rai)
– 2 tablespoons fenugreek seeds (methi)
– 1 tablespoon mace (javitri)
– 1 tablespoon nutmeg (jaiphal)
– 2 tablespoons turmeric powder (haldi)
– 1 tablespoon red chili powder (lal mirch)
– 1 tablespoon garam masala

Instructions

1. Begin by roasting the coriander seeds, cumin seeds, black peppercorns, fennel seeds, green cardamom pods, cloves, cinnamon stick, black cardamom pods, and star anise in a dry pan over medium heat. Roast until they start to crackle and release their aroma, then transfer them to a plate to cool.

2. In the same pan, add the black mustard seeds and fenugreek seeds. Roast them until they splutter and turn golden brown. Again, transfer them to a plate to cool.

3. Once all the roasted spices have cooled down, grind them together using a mortar and pestle or a spice grinder until you achieve a fine powder.

4. In a separate bowl, mix the ground spices with the mace, nutmeg, turmeric powder, red chili powder, and garam masala.

5. Your biryani masala is now ready to be used in your favorite biryani recipes. Store it in an airtight container in a cool, dry place to maintain its freshness.
